Chef RV's Chicken Biryani

Ingredients
- 250g chicken thighs, boneless and skinless
- 1/4 cup plain yogurt
- 1/4 tsp turmeric
- 1/4 tsp garam masala
- 1/4 tsp cayenne pepper
- 1/4 tsp salt
- 1 tbsp butter
- 1/2 onion, thinly sliced
- 1 clove garlic, minced
- 1/2 tbsp ginger, grated
- 1/2 tsp cumin seeds
- 2 cardamom pods
- 1/2 cinnamon stick
- 1/2 cup basmati rice, rinsed
- 1 cup chicken stock
- 1/4 cup cilantro, chopped
- 1/4 cup mint leaves, chopped
Steps

In a bowl, mix chicken with yogurt, turmeric, garam masala, cayenne pepper, and salt.

Set aside to marinate for 15 minutes.

Heat butter in a pan over medium heat.

Add chicken to the pan and brown on both sides.

Remove the chicken and set aside.

In the same pan, add onion, garlic, and ginger.

Cook until the onions are golden brown.

Add cumin seeds, cardamom pods, and cinnamon stick to the pan.

Cook until fragrant.
10.
Add the rice to the pan and stir to coat the rice in the butter and spices.

Add the chicken stock to the pan and stir.
12.
Place the browned chicken on top of the rice.

Cover the pan and let it simmer for 20 minutes, or until the rice is cooked and the chicken is fully cooked.
14.
Sprinkle the cooked biryani with chopped cilantro and mint before serving.
