Ingredients
- 150g sugar
- 156g all-purpose flour
- 2 tbsp cocoa powder
- 1/2 tsp baking soda
- 1 tsp baking powder
- 169g melted salted butter
- 1 large egg
- 180g double cream
- 1 tbsp vinegar
- Red food coloring, to taste
- 350g cream cheese
- 45g powdered sugar
- 90g salted butter
Steps
1.
Preheat your oven to 350F (180C) and line a muffin tin with 12 cupcake liners.

In a medium-sized bowl, whisk together the flour, cocoa powder, baking soda, and baking powder.

In a separate bowl, mix the melted butter, sugar, and egg until well combined.

Add the double cream, vinegar, and desired amount of red food coloring, mixing until a smooth batter forms.
5.
Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
6.
Using an 8oz ice cream scooper, fill each cupcake liner about 2/3 full with batter.
7.
Bake your cupcakes for 25 minutes, or until a toothpick inserted in the center comes out clean.
8.
Allow the cupcakes to cool completely before frosting.
9.
For the frosting, beat together the cream cheese, powdered sugar, and salted butter until smooth and creamy.
10.
Frost the cooled cupcakes as desired.
