Gooey Basque Cheesecake

Ingredients
- 320g cream cheese
- 85g sugar
- 110g eggs
- 190g heavy cream
- 10g cake flour or cornstarch
- A few drops of vanilla extract
- A bit of vanilla bean
Steps
1.
Prepare the pan by lining it with parchment paper.
2.
Lightly beat the cream cheese.
3.
Add sugar and mix until well combined.
4.
Gradually add the eggs to the cream cheese mixture.
5.
Pre-mix the heavy cream with cake flour and add this to the cream cheese mixture.
6.
Pass the batter through a sieve and pour into the prepared pan.
7.
Bake the cheesecake at 220℃ for 18-22 minutes.
8.
Let the cheesecake cool completely at room temperature.
9.
Refrigerate the cooled cheesecake for at least 12 hours to set.
10.
Glaze the cheesecake with Absolu Cristal.
11.
Store the cheesecake in the fridge for up to 3 days.
