Gooey Basque Cheesecake

Ingredients
- 320g cream cheese
- 85g sugar
- 110g eggs
- 190g heavy cream
- 10g cake flour or cornstarch
- A few drops of vanilla extract
- A bit of vanilla bean
Steps
- 1.Prepare the pan by lining it with parchment paper.
- 2.Lightly beat the cream cheese.
- 3.Add sugar and mix until well combined.
- 4.Gradually add the eggs to the cream cheese mixture.
- 5.Pre-mix the heavy cream with cake flour and add this to the cream cheese mixture.
- 6.Pass the batter through a sieve and pour into the prepared pan.
- 7.Bake the cheesecake at 220℃ for 18-22 minutes.
- 8.Let the cheesecake cool completely at room temperature.
- 9.Refrigerate the cooled cheesecake for at least 12 hours to set.
- 10.Glaze the cheesecake with Absolu Cristal.
- 11.Store the cheesecake in the fridge for up to 3 days.
