Homemade Gingerbread

    Sift together the flours, baking soda, and spices.

    Beat butter, brown sugar, glucose, honey, marmalade, and fleur de sel for 5 minutes.

    Add eggs and mix for 10 minutes.

    Incorporate the dry ingredients.

    Bake in a greased loaf pan at 170°C for 1 hour.

    Cool, wrap, and store at room temperature.

Lemon Cream

    Zest and juice the lemons.

    Rub zest with sugar.

    Cook over bain-marie to 83–84°C.

    Cool to 60°C, then incorporate butter.

    Mix food coloring with egg whites and combine without mixing yet.

    Boil sugar and water to 118°C; whip the second portion of egg whites.

    Incorporate meringue into almond mixture, fold until smooth.

    Pipe 3.5 cm rounds, let crust for 30 minutes.

Caramel Macaron Shells

    Repeat similar steps with caramel coloring and coffee essence.

Assembly

    Cut gingerbread into 1.5 cm cubes.

    Pipe lemon cream onto lemon shells, press in a gingerbread cube, and cover with a caramel shell.
