Chef RV Banana Crumble Cake

Ingredients
- 500g bananas, peeled and ripe
- 50g white sugar
- 110g brown sugar
- 120g vegetable oil
- 240g all-purpose flour
- 2 tsp baking soda
- 0.5 tsp salt
- 125g butter
- 150g all-purpose flour
- 25g sugar
- 0.5 tsp cinnamon powder
Steps
- 1.Preheat your oven to 325F and prep an 8x8 square pan - coat it with butter or line it with parchment paper.
- 2.In a mixing bowl, toss in the peeled bananas.
- 3.Add the white and brown sugar, the baking soda, and the salt.
- 4.Beat slowly initially, and gradually increase the speed until the bananas are properly mashed.
- 5.Add the sifted all-purpose flour and oil, continuing to mix until just combined.
- 6.In another bowl, combine the all-purpose flour, cinnamon, sugar, and room-temperature butter.
- 7.Combine the ingredients until they form a crumbly texture.
- 8.Pour the batter into the prepped pan, spreading it evenly.
- 9.Cover the batter with the crumble until completely covered and press it lightly to ensure it stays intact.
- 10.Bake for about 45-55 minutes or until firm to the touch.
- 11.Allow the cake to cool a bit before loosening the sides and removing it from the pan.
- 12.Flip it onto a chopping board then invert again using another board.
