In a bowl, mix dark soy sauce, light soy sauce, sugar, brown sugar, white sugar, honey, sesame oil, garlic, and grated ginger. Stir until the sugars dissolve.

Heat a pan over medium-high heat, add chicken chunks, and stir-fry until golden brown and cooked through.
