Preparation

    Preheat the oven to 200°C (400°F).

    Warm oil in a large skillet over medium heat. Add onion, stirring occasionally, and cook until translucent and lightly browned.

    Remove from heat and transfer onion to a medium bowl. Add beef, sausage, rice, scallions, paprika, cayenne, oregano, salt, and pepper. Mix well.

    Use a spoon to stuff the mixture into the cavity of each pepper. Arrange the stuffed peppers in a shallow pan and cover with aluminum foil.

    Bake for 30 minutes or until the tops are crusty and brown. Serve hot.
